Dry-Rubbed Oven Baked Ribs

Makes 2 servings


1 rack of spareribs

¼ cup paprika

2 tablespoons brown sugar

1 tablespoon kosher salt

1 tablespoon dried thyme

1 tablespoon garlic powder

1 tablespoon smoked paprika

1 teaspoons red pepper flakes

1 teaspoon ground coriander

1 teaspoon ground black pepper


Preheat the oven to 300 F. Mix the paprika, brown sugar, kosher salt, thyme, garlic powder, smoked paprika, red pepper flakes, coriander, and black pepper in a small bowl. Remove the ribs from the package and pat dry. Line a baking sheet with parchment.  Put the ribs on the baking sheet and coat both sides evenly with the rub. Lay them with the thicker, meatier side facing up to cook.


Bake for 3 hours until they are tender and can be separated with little effort. If the meat is still tough, cook for 30 minutes more. Cut off a small piece of meat from the end to test and eat when it’s done to your liking. Cut into individual ribs and serve with a side of barbeque sauce or as-is.
