Skirt steak is a thin, long cut of beef from the diaphragm muscles of the cow. Shirt steaks are amazingly flavorful, take to marinades well, and are best cooked quickly over high heat.
The skirt steak was delicious! I cut it into 4 pcs and cooked in a frying pan. A few minutes on ea size with some salt and pepper! Very tender and full of flavor
