Primal Ground Beef Onion Smash Burgers

Makes 4 servings


½ white or yellow onion

1 package of primal ground meat

4 slices cheddar cheese

½ cup dill pickles, finely chopped

2 tablespoons butter

Salt and pepper, to taste 

4 burger buns


Cut the onions as thinly as possible, this is best done on a mandolin. Set aside. Next, separate the ground beef into four roughly equal sections and roll into a ball. Cut parchment paper into four roughly 4x4 inch squares.


Heat a large heavy-bottomed skillet over medium-high heat, try to do two burgers at a time depending on the size of your skillet, make sure there is enough room to smash the patties. Start with one patty if there isn’t enough room. Start by adding one tablespoon of butter, as its melting, make a small pile in the pan with a quarter of the onions, top with a ball of the ground meat and season generously with salt, repeat on the other side of the pan. Then, take a piece of parchment, put it on top of the burger and smash the patty down with a metal spatula or steak weight and extra force from your hand until it is about four inches wide. Repeat with the other patty. Cook for 2-3 minutes before flipping and adding a slice of cheese on top, cook another 2-4 minutes. Remove from the pan with the spatula directly to a burger bun. Repeat with the other two burgers. 


Top each burger with the chopped pickles and serve with condiments of your choice.
