One Pan Italian Sausage Pasta

Makes 6-8 servings

1 tablespoon olive oil or butter

1 pound mild italian sausage, crumbled into small chunks

1 small delicata squash, diced, seeds removed

5 garlic cloves, thinly sliced

2 cups kale, thinly sliced

½ cup sun-dried tomatoes

1 teaspoon red pepper flake

2 cups cream

1 box (16 oz) dried pasta

1 cup pasta water

2 sprigs basil, torn

¼ cup parmesan

First, put a large pot of water over high heat for the pasta, bring to a boil. Once boiling, add a generous amount of salt and the pasta, cook per the box, until just done. Save one cup of the pasta water, drain the rest and reserve the pasta to the side.

Meanwhile, in a large saute pan or skillet, heat up the olive oil or butter over medium heat. Add the sausage and cook, browning on all sides until fully cooked through. Remove the meat from the pan with a slotted spoon. Add the delicata squash and cook for about ten minutes, browning on all sides and stirring to keep from sticking. The squash is done when just becoming tender. Next, add the garlic, stirring until fragrant. Add the kale, sun-dried tomatoes and red pepper flake, mix to combine and wilt the kale. Once wilted, add the sausage back in with the cream and pasta water, let simmer over medium-low heat until the sauce is thickened and coats the back of a spoon.

Add the pasta to the pan or mix in a large bowl, mix in the basil and cheese to finish.
