Cheesy Chorizo Smash Tacos
Makes 8 Tacos
1 pound ground chorizo sausage
1 cup queso Oaxaca or low-moisture mozzarella, grated
8 small corn tortillas
¼ cup white onion, small diced
½ cup cilantro, roughly chopped
Pickled jalapenos, sour cream, and lime wedges to garnish
Combine chopped onion and cilantro in a bowl and set aside.
Combine the chorizo and grated cheese in a large bowl, mix together thoroughly. Separate into eight similarly sized portions. With a tortilla flat on a plate, smash a serving of the mixture across the tortilla in a thin layer spreading with clean hands, repeat with the rest of the meat and tortillas.
Preheat a nonstick pan over medium-high heat. Place the tortilla meat side down and cook for three to four minutes. Carefully flip over with a spatula and crisp for another three minutes on the tortilla side. Remove from the pan and repeat for all of the tacos.
Top with cilantro and onion mixture, sour cream, a squeeze of lime juice, and/or pickled jalapenos.
