Canadian Bacon, Brie, and Apple Pastries

Makes 12 Servings


1 package Canadian Bacon

1 package puff pastry

1 8 oz wheel of brie, sliced into 12 slices

1 large apple

2 tablespoons dijon mustard

2 tablespoons honey

2 tablespoons mayonnaise 

1 egg

1 tablespoon milk or cream

black pepper, to taste


Preheat the oven to 400 F.


In a small bowl, combine the dijon, honey, and mayonnaise. Whisk to combine.


Cut the slices of Canadian bacon into small strips, slicing each piece into 8-10 smaller pieces.


Line two baking sheets with parchment paper. Unroll the puff pastry onto a cutting board and cut each sheet into 6 even rectangles. Transfer to the lined baking sheets and space evenly.


Using a knife, cut a rectangle into each piece, do not go through to the bottom of the dough, just go through the top half or so, creating a one inch border. Use a fork to poke the inside rectangles 3-4 times.


Spread the honey mustard on the center area of each piece of pastry. Next, layer six to eight pieces of canadian bacon, 2 slices of apple, and top with the slice of brie. Season each pastry with pepper. 


Whisk together the egg and the milk or cream in a small bowl until combined. Using a pastry brush, brush the edges of each puff pastry with the egg wash.
