Beef Kielbasa Potato Hash
Makes 4 servings
½ package of Beef Kielbasa, sausages sliced into coins
2 medium yukon gold potatoes, diced into small cubes
1 bell pepper, diced into small cubes
½ small yellow onion, finely chopped
1 tablespoon butter
Start with a large skillet over medium heat. Add one tablespoon of butter and cook the potatoes for 15-20 minutes, stirring and flipping until browned on all sides, seasoning with salt. Remove the potatoes and set aside. Add the sausage and stir every few minutes to brown on all sides for about five minutes. Add onions and peppers and saute, season with a little more salt and cook for another five to seven minutes until softened. Add the potatoes back in, stir to combine and cook for another five minutes. Serve with eggs or eat as-is.
